Okay, so I’m obsessed with these mini muffins 😍 I made them with my freshly milled hard white wheat, and honestly, they are so good. Soft, a little nutty from the fresh flour, and full of chocolate chips — perfect for snacks, lunchboxes, or just because. And the best part? They’re super quick and easy to make!
2 cups freshly milled hard white wheat flour - see Azure standard page
1 tsp baking soda
½ tsp salt
½ cup softened butter (or coconut oil)
½ cup sugar
½ cup brown sugar
2 tsp vanilla
2 eggs
1 cup chocolate chips
Preheat your oven to 350°F (175°C). Grease or line a mini muffin tin. Gather all of your ingredients!
In a bowl, mix together flour, baking soda and salt.
Add the softened butter, brown sugar, sugar, eggs, and vanilla. Mix in your stand mixer or use a rubber spatula!
Spoon the dough into your mini muffin tin, filling each about 3/4 full.
Bake for 8-10 minutes, until the tops are lightly golden and a toothpick comes out clean.
Let them cool a tiny bit before you eat them and burn your toungue. Seriously though, you will want to eat them all!
