There's nothing quite like the smell of fresh bread baking, especially when its soft, fluffy and made with your own fresh milled wheat! These sub rolls are perfect for sandwiches - they're just the right size, soft but chewy, and have that little hint of sweetness that makes every bite feel like a treat.
I love making these in my bread maker because it mixes and kneads the dough for me, but you still get that homemade bakery feeling! Using Hard White Wheat makes them hearty and flavorful, and even though there's no vital wheat gluten, they still come out tall, soft, and perfect for filling with your favorite sandwich toppings!!!
I make them for my older brother every week for school, and when I forget (lol), he gets VERY upset with me! Haha!!
Ingredients and Supplies
500g Freshly Milled Flour - see Azure Standard Page
290g Warm Water
50g Milk
30g Olive Oil
40g Honey
10g Salt
(this bread maker has a whole wheat setting, which is what I use!)

Start by milling your hard white wheat berries into fresh flour.
It is very self explanatory lol!
Pour the warm water, milk, olive oil, honey, and salt into your bread maker first. This is the base that makes your sub bread soft, sweet, and perfectly seasoned.
Now add your freshly milled hard white wheat flour on top of the wet ingredients, followed by the active dry yeast. This is what makes your sub bread rise and become soft and fluffy.
Select the whole wheat dough cycle on your bread maker and let it run (about 3 hours total). Now comes the easy part — the bread maker does all the kneading for you!
Once the bread maker cycle is done, carefully remove the dough from the pan onto a floured surface. Divide into 5 equal pieces (~190g each)
Shape each piece into an 8-inch log, smoothie top, and pinch the seam underneath.
Cover and Rise for about 40-60 minutes, or until nearly doubled. They should look light and puffy - this is where you get that soft texture.
Preheat the oven to 375F while the dough is rising. Bake 16-18 minutes, until golden brown and hollow-sounding when tapped.
Right out of the oven, Brush with melted butter or olive oil and cover with a towel to cool. This traps steam and keeps them soft and chewy!
